Dinner Recipe
Veggie Fried Rice
Soft, flavorful, and full of colorful veggies.

Ingredients
¼ cup cooked soft rice
1 tbsp finely diced steamed carrots and peas
1 tsp scrambled egg
Dash of low-sodium soy sauce

Instructions
1. Lightly sauté the veggies in a bit of oil.
2. Add rice and scrambled egg.
3. Stir well and serve warm.

Baked Sweet Potato Cubes with Cottage Cheese
Soft textures and creamy protein.

Ingredients
¼ cup baked sweet potato cubes
2 tbsp full-fat cottage cheese

Instructions
1. Bake sweet potato until very soft.
2. Let cool and serve with dollops of cottage cheese.

Ingredients
¼ cup steamed cauliflower
1 tbsp shredded mild cheddar cheese
1 tbsp milk

Instructions
1. Blend cauliflower with milk until smooth.
2. Stir in cheese until melted.

Ingredients
2 tbsp shredded cooked chicken
1 tbsp steamed finely chopped spinach
¼ cup mashed potato

Instructions
1. Mix everything together until well combined.
2. Add a bit of warm water or broth to soften if needed.

Mini version of a favorite dish.

Ingredients
2 tbsp chopped cooked pasta (like small shells or lasagna pieces)
1 tbsp ground beef or lentils in mild tomato sauce
1 tsp grated cheese

Instructions
1. Mix pasta with sauce and sprinkle cheese on top.
2. Serve warm and cut into toddler-size bites.

Ingredients
¼ cup canned chickpeas (rinsed & mashed)
1 tsp olive oil
½ slice soft pita bread

Instructions
1. Mix mashed chickpeas with olive oil.
2. Serve with small pieces of pita to dip.

1 tbsp grated tomato (no skin/seeds)
1 tbsp mild shredded cheese
